Roasted Pork Ribs with Pineapple and Pepperoni



ซี่โครงหมูอบสับปะรด เป็นอีกเมนูฮิตประจำบ้านค่ะ อร่อย ง่าย วิธีทำไม่ยุ่งยาก เพียงแต่ใช้เวลานิดนึง มาดูกันว่าไอ้เจ้าเมนูเนี้ยะ มันทำยังไงเน้อะ

เครื่องปรุง
1 กก. ซี่โครงหมู
1 ลูก พริกหวาน หั่นเต๋า
1 ลูก หอมหัวใหญ่ (ลูกเล็กใช้ 2 ลูกค่ะ) หั่นเต๋า
1 กระป๋องเล็ก สับปะรด หั่นเป็นท่อน
3-4 กลีบ กระเทียมแกะเปลือก
ผงปรุงรส (ใช้คนอร์ครบรสค่ะ)
น้ำมันหอย
ซีอิ๊วขาว
เกลือ 
ซอสมะเขือเทศ
พริกไทย

วิธีทำ

1. ย่างซี่โครงหมูในกระทะใช้ไฟกลางถึงอ่อน (ไม่ต้องใส่น้ำมัน) จนเนื้อด้านนอกสุก แล้วตักใส่จานรองด้วยกระดาษซับมัน พักไว้





2. ใช้กระทะเดิมที่มีน้ำมันเล็กน้อยจากการย่างหมู ใส่พริกหวาน หอมใหญ่ และกระเทียมลงไปผัด เร่งไฟกลางไปทางแรง ผัดให้สลดเล็กน้อย แล้วใส่สับปะรดลงไป เติมผงปรุงรส น้ำมันหอย ซีอิ๊วขาว เกลือนิดหน่อย พริกไทย และซอสมะเขือเทศลงไป ผัดให้เข้ากัน แล้วเติมน้ำสับปะรดที่เหลือในกระป๋องลงไป รอจนซอสเดือดอีกครั้งแล้วชิมรส ขาดเหลืออะไรก็เติมลงไปค่ะ 



3. จากนั้นตักน้ำซอสที่เตรียมไว้ออกจากกระทะครึ่งนึง แล้วเอาซี่โครงหมูลงไปวางเรียงกันจนหมด แล้วเทน้ำซอสกลับลงไปทับซี่โครงหมูนั้น เติมน้ำเปล่าลงไปพอให้ปริ่มกระดูกหมู (ไม่ต้องถึงกับท่วมนะคะ) เร่งไฟแรงจนน้ำซอสเดือด แล้วลดไฟลงอ่อนสุด




4. ใช้ฝาปิดโดยเผยอไว้เล็กน้อย ทิ้งไว้ 1-2 ชม. แล้วแต่ว่าชอบเปื่อยแค่ไหน โดยในรูปทิ้งไว้ 2 ชม. ค่ะ หมั่นมาเปิดดูทุกๆ 30 นาทีว่าน้ำซอสลดลงเยอะไปมั้ย ถ้าแห้งไปให้เติมน้ำลงไปอีกนิดหน่อยค่ะ

ขนมบัวลอย (Dumpling in Sweet Coconut Milk)



Ka-Nom Bua Loy or Dumpling in sweet coconut milk is quite easy to make. Actually I'm not crazy about any sweet or dessert but this dessert is the one I like and I frequently don't make it too sweet.

Ingredients :
A bit of squash, taro root or sweet potato or just the color for food
Coconut milk
Glutinous starch
Palm sugar



I use taro root, squash and pandan juice. For taro root and squash, I cook it in steamer.



Glutinous starch



Put taro root and squash in a bowl and add glutinous starch a bit at the time. Rub it until it mixed well together and if it too dry, you can put a bit of water.




Apparently I can make one color a the time but it is more beautiful if I make 3 colors up :D I like it to look colorful.



It's time to make little dumpling ;) I do it like in the picture and then cut it in small pieces, to do it like this make it easier and every of them will be even (more or less).



Put glutinous starch in a plate and the put and mix all the dumpling with the starch so it won't stick together. Boil water in a pot, when it boiled then low the heat and put dumplings in and wait until they float up then take all out from the pot and put it in cold water.




In a small pot, put coconut milk and warm it up on low heat. When it hot then put palm sugar (a little bit at the time if you don't like it sweet) and a pinch of salt. Put dumplings in the hot coconut milk until all dumpling float up again then it's ready to be served !!

Tagliatelle al ragù di funghi

Last weekend I wend shopping with my hubby, we saw mixed mushroom in a pack then we discussed that we're gonna cook something new but simple with it. So we bought a pack of mixed mushroom and google for "Ragù di funghi" which means mushroom sauce. Anyway in Italian their are ragù and sugo , before I tried to find out by asking some Italians "What the different between ragù and sugo?", apparently they can't tell me exactly what the different is (or maybe I didn't understand them very well because they spoke Italian :D).

Finally, after I searched and compared many recipes of ragù and sugo then I figured out myself that :

Ragù : takes longer time to cook and main ingredient has to be "soffritto" : chopped onion, carrot, celery and parsley and of course tomatoes.

Sugo : takes shorter time to cook, actually it is just a sauce.

After searching for the recipes, there are so many of them and I just pick or mix some of them together :) let's see what it's gonna look and taste like.




Not too bad isn't it? :) 

Ingredients :
250 g. of tagliatelle or fettucine
300 g. of mixed mushroom
100 g. of tomato paste
1 glass of red wine
1 glass of water
Soffritto : Chopped parsley, carrot, onion and celery 
Olive oil extra virgin
Butter

Salt and pepper
Grated parmesan







1. Warm butter and olive oil in a sauce pan when the butter all melted put soffritto then mix it well and cook for 5 minutes with medium-low heat





2. Put mixed mushroom, stir it all together with medium heat for a couple minutes let the water from the mushroom evaporates then put a glass of red wine, turn the heat up and wait until all the red wine evaporated.




3. Put tomato paste, salt, pepper and a glass of water, wait until the sauce boils again and then leave it for 30 minutes with very low heat.




4. Boil the pasta, put and stir it in the sauce for a minute then it is ready to be served with grated parmesan.

Green Apple Sour and Spicy Salad



Same idea as green papaya salad just change the main ingredient from green papaya to green apple :) It is very light and nice especially for the full summer like now. 

Ingredients :
1 green apple
2 small carrots (grated)
1 tbs dried salted prawn
3-4 cherry tomatoes
Salad dressing ;- salt, chili powder, syrup, lemon juice and honey

Cut an apple and tomatoes into small pieces, grate carrots and put everything in a salad bowl included dried salted prawn. Season with salad dressing, mix it well together and it ready to serve!





Spicy Pickled Bamboo Soup with Fish



Since I came here in Italy (2 years ago) For some reasons I never made this dish at all :( even it is the one of my favorite. Why??? I can't find any answer :D  but finally I did yeah yeah! The dish is really E-San style ... we don't use coconut milk as much as the central (I think not at all) The taste is similar to Tom Yum, the sour is not from lime juice but from the pickled bamboo shoot. 

Ingredients :
150 g. fish (any kind you like)
200 g. pickled bamboo shoot
500 ml. fish broth
lemon basil
fish sauce
sugar
Paste (the ingredients for the paste is in below)



I use the one in the plastic bag



Paste
5 cloves of garlic
2 shallots
5-10 dried chilies (depend on how spicy you like)
3 sliced Galangal





Ground everything in a mortar or food processor 




Clean the pickled bamboo shoot with water 2-3 times




These are the lemon basil, it is the one of many Thai basils we have
if you see it close you will see lot of white hair under the leave


How to cook : 
  1. Put 500 ml. of fish broth in the pot, when it boiled then put the paste and wait until it boiled again.
  2. Put fish and wait until it cooked. I suggest not to stir it because we believe the soup will smell fishy. 
  3. When the fish cooked, try the soup and season with fish sauce and a bit of sugar. I put a bit of pickled fish sauce because I love the taste of it :) Very E-San style.
  4. Put lemon basil and shut the fire of. It's ready to serve!

Stir Fried Rice Noodle (E-San Style)



I love this dish so much, I love to have it with green papaya salad (of course E-San style). How to cook is quite simple for Thai kitchen because the ingredients are the stuff that we actually always have in the kitchen. For the meat ... it is not important because you can cook it without meat and it still delicious anyway :) let's see how to make it.




Rice noodle (soak it in the water for at least 10 minutes), green onion and soy bean sprouts, ground pork or whatever meat you prefer ;)




Chopped 2 shallots and 3-4 cloves of garlic




From left to right : Vegetable oil, soy bean paste, vinegar, fish sauce, light soy sauce, dark soy sauce, tamarind juice and palm sugar.




Warm 3 tbs of vegetable oil in a pan and soften chopped garlic and onion a couple minutes, then put ground pork and cook until it changes color. Put soy bean paste, vinegar, fish sauce, light and dark soy sauce and palm sugar (regular sugar can be used instead). With the low fire, let it cook until the sauce gets thick and brown. Try the sauce in the way you like, it should taste sweet and salty and just a bit sour.




Put rice noodle and raise up the fire, stir and mix it well together with the sauce. Add some water if the noodle get too dry. When the noodle cooked then put green onion and soy bean sprouts, let it cook 1 minute and then it is ready to serve.




Fried eggs like in the pictures or grounded peanuts can be added in this dish. I prefer just the fried egg. As I said at the beginning, this dish goes well with green papaya salad and some other things such as grilled chicken and Thai sausage.
